Description

Ingredients

2 cups cold cooked rice

1 lb boneless chicken thighs, diced

1 cup mixed vegetables (peas, carrots, onions)

2 eggs, beaten

2 tbsp soy sauce

1 tbsp sesame oil

1 tbsp cooking oil

2 green onions, sliced

Salt and pepper to taste


Instructions

1. Preheat Blackstone griddle to medium-high and add cooking oil.

2. Add diced chicken and cook until golden brown and fully cooked.

3. Push chicken aside; add vegetables and stir-fry for 2 minutes.

4. Add cold rice and spread evenly, letting it toast for 1-2 minutes.

5. Pour soy sauce and sesame oil over rice and mix everything.

6. Push rice aside, scramble eggs in open space until cooked.

7. Fold scrambled eggs and green onions into the rice mixture.

8. Season with salt and pepper to taste, then serve hot.

Notes

Use day-old cold rice for best texture.

Adjust soy sauce and sesame oil to your taste.
