Description
A hearty, flavorful combo of ground beef and sweet potatoes — perfect for busy nights, meal prep, or healthy comfort food cravings.
Ingredients
1 lb lean ground beef
2 medium sweet potatoes, diced
1 tbsp olive oil
1 small onion, chopped
2 garlic cloves, minced
1 tsp cumin
1/2 tsp chili powder
1/4 tsp smoked paprika
Salt and pepper to taste
1/4 cup beef broth or water
Optional toppings: avocado, shredded cheese, cilantro
Instructions
1. Heat olive oil in a large skillet over medium heat.
2. Add ground beef and cook until browned, breaking it up as it cooks.
3. Remove beef and set aside. In the same pan, add onions and garlic. Cook 2-3 minutes.
4. Add diced sweet potatoes, cumin, chili powder, paprika, and a pinch of salt.
5. Pour in broth, cover, and cook for 10–12 minutes until potatoes are fork-tender.
6. Return beef to pan, stir everything together, and cook for another 2–3 minutes.
7. Taste and adjust seasoning. Top with your favorite garnishes.
8. Serve warm.
Notes
Make it paleo or Whole30 by skipping cheese and using avocado.
Double the recipe and freeze portions for easy lunches.
