Ingredients
2 large English cucumbers, thinly sliced
1 cup cherry tomatoes, halved
1/2 red onion, thinly sliced
1/4 cup fresh parsley, chopped
3 tbsp extra virgin olive oil
2 tbsp lemon juice
1 tsp dried oregano
Salt and pepper to taste
Optional: 1/4 cup feta or olives
Instructions
1. Slice cucumbers and onions thinly.
2. Add cucumbers, tomatoes, onions, and parsley to a bowl.
3. In another bowl, whisk olive oil, lemon juice, oregano, salt, and pepper.
4. Pour dressing over vegetables.
5. Toss everything gently to combine.
6. Chill for 30 minutes or serve immediately.
Notes
This salad is best eaten the day it’s made, but it holds well for up to 2 days. You can add feta or olives for extra richness. Always store in an airtight container in the fridge.
