4 bone-in, skin-on chicken thighs

2 tbsp olive oil

1 tbsp smoked paprika

1 tsp garlic powder

1 tsp onion powder

1 tsp kosher salt

1/2 tsp black pepper

Wood pellets (hickory or applewood)


Instructions

1. Preheat your pellet smoker to 250°F using hickory or applewood pellets.

2. Pat chicken thighs dry with paper towels.

3. In a small bowl, combine paprika, garlic powder, onion powder, salt, and pepper.

4. Rub olive oil over the chicken thighs, then coat with the seasoning mixture.

5. Place the chicken on the smoker grate, skin side up.

6. Smoke for 1.5 to 2 hours or until internal temperature reaches 175°F.

7. Optionally, sear skin on a hot grill for 2 minutes to crisp.

8. Let rest for 5 minutes before serving.
